There are a number of ways you can utilize your sporting skills abroad in developing countries. An example of projects available include coaching football in Costa Rica, swimming in South Africa or golf in Ghana. Whether your specialty is cricket, hockey, tennis, netball, horse-riding, or boxing, there is a project out there that could use your skills. Some projects do not necessarily need you to be an excellent sports player yourself. Being able to coach and motivate and lead groups of people could be far more important, so don't be put off if you feel you're not at Olympic standard yourself, but enjoy sport all the same.
